Didactic Program Coordinator
Karen Brasfield is a Senior Lecturer in the Nutrition and Foods Program in the School of Family and Consumer Sciences. She earned her Bachelor degree from Norfolk State University, and her Master in Health Promotion Management from Marymount University. She completed her Dietetic Internship at Walter Reed Army Medical Center, and is a Registered Dietitian. She teaches a variety of class including Food Production and Management, Nutrition Education and Counseling, Nutrition Assessment, Food Systems, and Nutrition in Sports and Wellness.
