Dietetic Internship Director


Hannah Thornton is a Clinical Assistant Professor and Dietetic Internship Director at Texas State University. She is the co-founder and director of the Food Security Learning Community, a group that engages nutrition students of all levels in the creation of community nutrition interventions for food insecurity while providing peer, near-peer, and faculty mentorship. Through this work, she co-founded Bobcat Bounty, the first student-run, on-campus food pantry at Texas State. Hannah has been recognized with Texas State Presidential Distinction Awards for excellence in teaching and service, as well as the College Achievement Award for excellence in service. She was named runner-up at the University-level for excellence in online instruction.


Hannah comes from a long line of educators and believes deeply in the power of education to transform lives. In her teaching, she focuses on creating inclusive educational spaces and engaging students in the process of identifying their own cultural biases so that they can become better dietetics practitioners. She is a graduate of Texas State‚Äôs  Multicultural Curriculum Transformation and Research Institute, and has incorporated a cultural focus into multiple dietetics courses, including Nutrition Assessment, Nutrition and Genetics, Biochemical Nutrition, and the dietetic internship. She currently serves on the Board of Directors for Diversify Dietetics and as a mentor for the Nutrition and Dietetics Educators and Preceptors dietetic practice group.


Hannah completed a BA in Biology at Smith College, an MS in Biology at Florida International University, and an MS in Nutrition as well as the Dietetic Internship at Texas State. She has authored and co-authored a number of scientific articles and presented the results of her research at national and international conferences. In addition to her work in higher education, Hannah maintains a small private practice aimed at offering supportive nutrition counseling to pregnant people and new parents in a positive, holistic environment.
